Dude for me it shows in English for me could a post a screenshot so that i could figure it out
Try google now launcher in Play store it is nice and feels like stock android

CM11 launcher:
Go to Play Store and search KitKat Launcher, then install this launcher DEVELOPED BY ISMAIL AKKULAK.
After you can change scroll effect to make it more Trebuchet-like

Yes you can. After installation go to applications and standard applications. You can set Zen launcher there as standard

Then search google how to freeze/disable system App using ADB.
Disable system app and then you can set other launcher as default
