So far I stick to stock kernel because I have 11w35 X10MP and it's more than risky to unlock my phone bootloader, I've tried MiniCM7Pro, GingerDX, GinTonic, ArcMini TX6, Xperian Blaze V3, Flame GDX.
I recommend Flame.GDX or ArcMini for quick response, stability and battery life. BUT it's always have different result for each phone so the best way is to try it yourself.

I think "the pros" would suggest that you try both and decide for yourself.
Give it a try.

You might also want to try Crowns MIUI rom. I've had Wofl's roms before all the way from v3 till v6 and then switched to Crowds. It has a much better battery life (and i mean MUCH better) than Wolf's and is smoother.
Just giving you options here.

I am also in same situation.
I am currently on WB 5 and want to change , I also at the point on which one to choose , can anyone help ? Or is there a better ROM than these two ?
Personally i think either try them both and decide, or try the TEAM rom
Many ROM needs time to get settled , which can take anywhere between 1-2 weeks .. also many problems starts after that , or becomes visible
I really like team or thjap's ics rkm

No ROM in the world, takes 1-2 weeks to settle.
Whatever happens after a clean install takes place in more or less 5-10 minutes after the first boot (re-generating dalvik cache, caches, etc).
Anyone who says otherwise, is clearly trying to dismiss bugs and doesn't really know how Linux works.
What could take so long is the user re-installing their apps and setting up the device to bring it in a usable and comfortable state.
Which has nothing to do with the ROM itself.
Just my 2 cents.

This is MiniCM7-2.1.9 with nAa-11 kernel. For using this rom you need to have your bootloader unlock.
This is the rom I'm using now, and is very fast and stable.
For stock kernel you can try any from Eyama.
[ROM] Flame.GDX ICS (2.3.7 nightly) 8/12/2011
thank you bro )

thank you for the nice info for me..my x10 mini pro already UNLOCKED BOOTLOADER
I upgraded MiniCMPro to MiniCM7 & nAa kernel and it feels like a new phone, so responsive. Great ROM/kernel and shame for Sony.

If you go for ICS then CM9
If You prefer GB then SEMC Debrand or MiniCM7
try minicm10 ---> ICS
try arcmini nxt5 or gingerdx ---> GB
if you prefer something stable go for minicm7.
otherwise you can go for minicm10 its not as fast as 7 but its nice to have jellybean on your x10 mini

I Agree:highfive:
MiniCM7-2.2.1 is the most bug-free, lightweight and fast of them all. They are all nice and have great potential due to our great devs, but this is the best option for daily use at the moment.
Also I can send to you an xperia style theme if you want to keep that touch and feel.
In my humble opinion, MiniCM7-2.2.1 is most stable, bug-free and more tested ROM than other ones.
You can also try MiniCM10, but is still in testing (I suppose). I mean, it works well but maybe you can find some unresolved bugs.
Enjoy with flashing.

With questions like these, you'll get as much answers as the custom ROMs that currently exist, simply because each user has different preferences.
So if you want to find the best ROM for you, start reading through the ROM threads and try out the ones that seem more appealing to you.
