I was wondering if there's a possibility to run any custom ROM based on Android 10|11 on Samsung Galaxy S5 SM-G900H which is using Exynos 5422 Octa SoC
There were some experimental oreo roms but the devs are pretty much gone. Maybe you can do it.

there are other ways to see if its genuine, screen responsiveness, feel of the phone etc.
