In that, the op said that method work on Global Stable v 7.1.8 Fastboot Rom. But when i click the link, it dead. I think Xiaomi have removed that v7.1.8 rom. So if anyone here has v7.1.8 Global Stable Fastboot Rom stored on your pc, could you mind uploading it to some site such as Google Drive, 4shared, MediaFire.... and then please give me the link. I'm quite the noob with a Hennessey mtk Redmi Note 3 in his possesion and I want to flash an MIUI 8 rom but I don't know which one. My phone's currently on MIUI 7 by xiaomi.eu (6.1.11 beta), I attached a screenshot below with further phone info.
Is there a stable rom I can flash? Do I need an unlocked bootloader to do so??

there is a xiaomi.eu miui 8 stable rom. if you already are on xiaomi.eu .. isn't it unlocked already? I don't know about Hennessey but normally you need unlocked bootloader + twrp.

A while a go I got a xiaomi redmi note 3 from gearbest and it seems they installed a custom rom in it.
The version is miui 7.1 stable (7.1.99.99 LHOCNCL)
Kernel version 3.10.73-perf-gc7d7acd
How can I update the phone to the newest stable global version?
I tried to search on the forum but no luck.

Follow these steps and you should be good to go.
1. Download the latest Fastboot Global Stable ROM from here - http://bigota.d.miui.com/V8.0.2.0.L...DG_20160805.0000.29_5.1_global_11a3c80166.tgz
2. Download the MiFlash Tool from here - http://api.bbs.miui.com/url/MiFlash
3. Follow this guide to the letter - http://en.miui.com/thread-235865-1-1.html
At the end, you should have a working official MIUI ROM on your device.

Don't do it ! You will brick the device. Search the rom for your phone model.
seem you'll be able to use kenzo rom for kate. but you should flash radio afterward. please see this thread & follow the link given, you'll find step by step guidance to do that

Backup your data by system backup, then used mi flash tool to flash a global rom. I personally prefer global dev rom. There's a instruction for flashing miui official rom in the download section. If you prefer customer recovery, used flasher toolkit V1.05: http://en.miui.com/thread-296053-1-1.html, after you have twrp installed, you can easily changed to zcx twrp for flashing miui official rom and can do a nandroid backup. There are many version of twrp for redmi note 3 pro: read the newbies guide on twrp, please read and really understand those topics then started to flash whatever your preference.
