Point in case: Samsung SM-T560. new on the market at the end of 2015 (I think), runs android 4.4.4 right now, patch level from may 2016.
Point in case: Samsung S5, runs Android 6.0
Point in case: Samsung S6 Edge, runs Android 6.0.1.
Current Android version from upstream is 7.1.1, right?
Or to actually get to the point: which brand should I set my eyes for if I want to get my updates BEFORE they are obsolete?
Right now I'm shopping for a new tablet. And I would like one with LTE so the google pixel is not it.

If you want Google android updates very fast then go for Google phones. Google gives first updates to their phones even the updates in development or in preview stage then after other phones like HTC,SONY,LG or many others.

I don't think a google PHONE is an option when I'm looking for a TABLET. even more so as the pixel tablet does not even have LTE.

ROM Updates?

I'm new to this and don't know the proper forum to ask about updates. Google seems to be releasing monthly software updates to address software vulnerabilities. (This is a GOOD thing.) They, of course, release only for Nexus devices.
With my Verizon Android phone, I understand (and am unhappy) that there are precious few updates, unless of course they in some way benefit Verizon. The phone remains on 4.4 a full year after Lollipop came out, and there are vulnerabilities over a year old that are not being fixed.
Frustrated that my Galaxy Tab 10.1 languished on Honeycomb, I rooted and installed the AOSP ROM by decatf. Except for the Amazon Kindle App and some video weirdness, all the apps I use seem happy. My question is, "is it correct to assume that the ONLY way my tablet will get security updates is if decatf decides to recompile his custom ROM and make it available?" (That seems unlikely, unless he personally owns and uses one of these old Galaxy Tabs.)
I am thrilled to have new life in my old Tab, and happy decatf is so generous with his time and effort. In addition, a case can be made that my Tab on this 5.1.1 ROM is more up to date (and secure) than more modern tablets which are not being updated by their manufacturers. In other words, buying a new Android tablet may be less secure than this one where the ROM was built from 5.1.1 in Nov of 2015.
Do I understand the situation correctly?

For me it seems so as well.
My wife got from our internet phone carrier last year (thankfully with no cost) a LG Homeboy tablet (LG-V507L) that is stuck with android 4.2.2.
Thanks to decatf, our old Galaxy tab 10.1 (a korean tablet converted to the international model) has seen new life since christmas '2015, even with AOSP 6. So, really, buying a new tablet today is out of question for us.

No Nougat Update for a3 2016?

Based on the existence of the certificate the update exists and is/was already under testing.
The only possible reason not to release it if they f*cked up the optimization of touchwiz for nougat like they did before a few times, resulting in failure to release updates to below flagship devices (like S4 mini).
The A36 is marketed as an ultra mid range device, so if it happens again despite their promises they could probably say goodbye to mid range buyers for once.
Let me explain: power users know Android. They (we) know that with every major update it's more and more optimized and less demanding on hardware, but Samsung seems to have a trouble following that trend with tw. They almost do the opposite, while people demand updates, and it's also in the interest of Google, so they have already warned manufacturers to do their best on the matter, specially Samsung after their past neglections. This topic has a great influence on our preferences and despite the other fields Samsung devices excelling in our eyes, it could change the situation. Now, most simple users choose devices based on our opinions. They ask us for advices. If I prefer Samsung devices, 100-150 people around me will prefer Samsung too based on my opinion; but if I prefer another brand instead, they will buy their devices instead. Now imagine how the numbers come with a lot more power users exisiting in the world, not just me.
The nougat update for A36 (having the broadest market amongst other A and J series devices thanks to it's handy size, yet powerful hw and quality housing) is a big opportunity to show us they have changed their attitude towards mid-range users, something people and Google are waiting for a long time, so they know it would be a disaster for them to back out from it in the final moments. I hope they won't.
I hope they release it but it explains why a7 and a5 2016 got nougat before the a3

These support guys don't know what they are saying... "I'm afraid it's not compatible" => there is no such thing. If they make a compatible build than it is compatible, simple as that. Also, when I've asked them, I got the response that IT IS GOOGLE WHO MAKES THE UPDATES, THEN THE CARRIERS REVIEW IT AND RELEASE IT. Yes, this is how it should be ideally if there would be a flexible hardware abstraction layer, but sadly it is Samsung who has to build the update after Google releases the source, and before carriers can deploy it... When I had to rate the conversation I wrote them that their support department has no access to proper information even about HOW updates work which is very troubling for conscious users who chose Samsung because of Android (+their quality hardware) and expect them to properly provide updates for their ultra mid range devices too, not just for their overpriced flagships.

Well, a few things are disappointing about receiving a December security update in February.
December patch does not include protection for the Spectre vulverability.
Android Oreo has been available to OEMs for 6 months now and the Z2 Play - Motorola's second in line phone - is still waiting to receive an update.
... My watch just got updated to Oreo today. Did you hear that Lenovo? My watch! :silly:

Your watch runs Android Wear, not Android. There is a huge difference in the code required to be modified, doubly so because Android Wear watches are all essentially running one of two processors, have the same RAM and ROM, and have similar screens.
Phones have more options, between screen types and resolutions, RAM and ROM sizes (and types and manufacturers), CPUs and modems, and there is significant difference in software.
The fact it's February and December is just being released (even my unlocked Z2 play just received December security patch) is disappointing, but Oreo is being actively worked on and a speak test was already released. Six months isn't terrible for a major OS update, though in reality it's closer to a year and change (very early code is sent to manufacturers with P being out last September).
If producing cell phones were easy you'd be doing it yourself and the hundreds of crowd sourced companies would have been able to do it.

The arm A53 of the snapdragon 626 used into the moto z2 play is not affected by either of the two bugs and the related patches are useless!
Source: https://developer.arm.com/support/security-update: "Only affected cores are listed,*all other Arm cores are NOT affected." The arm A53 is not listed.

Saying they don't run Android is like saying my Nexus Player doesn't run Android because the Leanback Launcher looks different from the launcher on your phone.

It would be closer to saying Android != FireOS except fireOS and Android are closer the Android and Android Wear.
A lot of code is removed in Android Wear vs Android (~950MB for pixel update, 350MB for Watch Sport).
The core is based on the same code, but it's not the same thing.

Slow updates from Motorola is no secret.

Hey XDA! I just wanted to ask if the s3 will get android P? Oreo will be ready in summer for it. Samsung release 2 major android version for their tablets.

The Tab S got Lollipop and Marshmallow, the Tab Pro didn't get a single update and got stuck on Kitkat.
In short: I don't think anybody has the answer to your question.

Well, considering that we are still waiting for Oreo, if the S3 does get Android P, it would likely only arrive around mid 2019.
Would you be happy to wait that long? I wouldn't.
Having had my S3 since June 2017, I will most likely have moved on to another tablet by that time. (due to battery and performance issues that are likely to crop up as the tablet ages)
I'm keeping an eye on the tablet market as it seems likely that we will see a high-end Chrome tablet sometime in 2018, which in my opinion would likely be a better alternative to an Android P tablet.

Google is ditching support for tablets from android P and up so if we get a update most likely we will get a Chrome OS update or a very very slim chance of Tizen but most likly samsung will just leave it as it is. Sometimes i wish samsung did not use Android anymore it is causing then sooooo many problems

Incorrect info.
No reason why Samsung won't continue to produce tablets and update the software for them as long as there is profit in the market. Probably even more so now Google have dropped its own tablets
Google only provide the base source code of each OS, it's up to the OEM's to tailor it to their needs.
Also just to note, historically higher end Samsung devices get 2 major updates.
Seeing as this device was released with Nougat, it's quite likely to receive one more update to Andoid P after receiving Oreo.

I received March security update on March 14th on my A52s. I see no performance, battery or any other issues.
Anyway if Samsung messed with software on purpose i doubt all those users would go and buy newer Samsung phone again. It's a reach..
A52s is a better device anyway with 778G instead of that Exynos. And it has 3.5mm jack.

Well A52 has way slower CPU and i would advise against updating to newer Android on midrange phones anyway. Updating definitely does slow down phones, but it's not like Samsung is doing it on purpose..
Xiaomi for example isn't updating mid range phones to android 12, but instead offering new MIUI 13 coupled with Android 11. Samsung should start doing something like this.
Similar is with Windows i have couple of older machines that work great on 7, fast and snappy, but on 10 or 11 are just unusable.

Then i don't know i honestly don't have a problem. Did you try clearing cache from recovery, that's something i usually do every time i do a major update to newer version.
I believe it's possible to downgrade with Odin yes. Tutorial
When i bought A52s i instantly got the oneui 4 update and updated so i really can't compare it if it would work faster on oneui 3.

I patched the ap tar from the last 11 A528B firmware. Did an install of the patched ap, cp, bl, and the csc tar not home one. Presto i had 11 on phone rooted. Used zygisk and safety fix 2.2.1 and lposed zygisk and all is good. Firefds R and GravityBox R working great....so yes you can go back to 11 and I am fine with the dec security patch.

Did Apple not get sued, for doing something like this.. They made the phones batteries go south, just so people would buy a new one.. I'm planning dumping this phone by the end of next month.. I'm not sure what I'm getting but it will not be a A53.

in the end OneUI is just android and we know android updates are always a joke, see Pixel 6/Pro, Oxygen/ColorOS, MIUI and etc...
I've had no significant issues with my A52s after any of the updates, just the odd bug/glitch. I wonder how much of this is down to individual apps not behaving nicely with the update, giving the impression that the problem is with Samsung's software.
